Ingredients
  

Vegetables
  • 2 cups cherry tomatoes halved
  • 1 large cucumber diced
  • 1 medium red onion thinly sliced
Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey optional
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Vegetables
  1. In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, and sliced red onion.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, honey (if using), salt, and pepper until well combined.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss gently to coat. Garnish with chopped parsley before serving.
