Ingredients
  

Dark Chocolate Mousse
  • 4 oz dark chocolate chopped
  • 2 large eggs separated
  • 2 tbsp granulated sugar
  • 1/2 cup heavy cream whipped
Milk Chocolate Mousse
  • 4 oz milk chocolate chopped
  • 2 large eggs separated
  • 2 tbsp granulated sugar
  • 1/2 cup heavy cream whipped
White Chocolate Mousse
  • 4 oz white chocolate chopped
  • 2 large eggs separated
  • 2 tbsp granulated sugar
  • 1/2 cup heavy cream whipped

Method
 

Prepare Dark Chocolate Mousse
  1. Melt dark chocolate in a heatproof bowl over simmering water. Let cool slightly.
  2. In a separate bowl, whisk egg yolks and sugar until pale. Stir in melted chocolate.
  3. In another bowl, beat egg whites until stiff peaks form. Gently fold into chocolate mixture.
  4. Fold in whipped cream until combined. Spoon into serving cups and refrigerate.
Prepare Milk Chocolate Mousse
  1. Melt milk chocolate in a heatproof bowl over simmering water. Let cool slightly.
  2. In a separate bowl, whisk egg yolks and sugar until pale. Stir in melted chocolate.
  3. In another bowl, beat egg whites until stiff peaks form. Gently fold into chocolate mixture.
  4. Fold in whipped cream until combined. Spoon on top of dark chocolate mousse in cups.
Prepare White Chocolate Mousse
  1. Melt white chocolate in a heatproof bowl over simmering water. Let cool slightly.
  2. In a separate bowl, whisk egg yolks and sugar until pale. Stir in melted chocolate.
  3. In another bowl, beat egg whites until stiff peaks form. Gently fold into chocolate mixture.
  4. Fold in whipped cream until combined. Spoon on top of milk chocolate mousse in cups.
Serve
  1. Chill the mousse cups for at least 2 hours before serving. Garnish with chocolate shavings if desired.
