Ingredients
  

Pasta and Tuna
  • 8 oz pasta (fusilli or rotini) cooked and drained
  • 2 cans tuna in water drained
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup black olives sliced
Dressing
  • 1/3 cup mayonnaise
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp Dijon mustard
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Herbs
  • 2 tbsp fresh parsley chopped

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix Ingredients
  1. In a large mixing bowl, combine the cooked pasta, drained tuna, cherry tomatoes, cucumber, red onion, bell pepper, and black olives.
Make the Dressing
  1. In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
Combine and Serve
  1. Pour the dressing over the pasta mixture and toss gently to combine. Garnish with chopped parsley and serve chilled.
