Ingredients
  

Pasta and Tuna
  • 8 oz pasta any short pasta like fusilli or penne
  • 1 can tuna drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup black olives sliced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dijon mustard
  • 1 clove garlic minced
  • salt to taste
  • pepper to taste

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, tuna, cherry tomatoes, cucumber, red onion, and black olives.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, dijon mustard, minced garlic, salt, and pepper.
Combine
  1. Pour the dressing over the pasta salad and toss until everything is well coated. Adjust seasoning if necessary.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
