Ingredients
  

Marinade
  • 1 cup plain yogurt for marinating
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 4 cloves garlic minced
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
Chicken and Vegetables
  • 1.5 pounds chicken breast cut into cubes
  • 1 bell pepper red cut into chunks
  • 1 bell pepper green cut into chunks
  • 1 onion large cut into chunks

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine yogurt, olive oil, lemon juice, garlic, paprika, cumin, salt, black pepper, and oregano. Mix well.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare the Kabobs
  1. Soak wooden skewers in water for 30 minutes to prevent burning.
  2. Thread the marinated chicken, bell peppers, onion, and zucchini onto the skewers, alternating between the ingredients.
Grill the Kabobs
  1. Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  2. Remove from the grill and let rest for a few minutes before serving.
