  • 1 cup Greek yogurt Plain, full-fat or low-fat
  • 1 medium cucumber Grated and excess water squeezed out
  • 2 cloves garlic Minced
  • 1 tablespoon olive oil Extra virgin
  • 1 tablespoon white vinegar
  • 1 tablespoon fresh dill Chopped, or 1 teaspoon dried
  • 1 teaspoon salt Adjust to taste
  • 1 teaspoon black pepper Freshly ground, adjust to taste

Method
 

Preparation
  1. Grate the cucumber and place it in a clean kitchen towel or cheesecloth. Squeeze out excess moisture.
  2. In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, white vinegar, chopped dill, salt, and black pepper.
  3. Whisk the mixture until well combined and smooth.
  4. Taste and adjust seasoning if necessary.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
