Cooking Instructions
- Fill a large pot with water and bring it to a boil. Carefully lower the eggs into the boiling water and boil for 15 minutes. After boiling, run cold water over the eggs and peel immediately.
- Slice the cooked eggs in half lengthwise and remove the yolks into a mixing bowl.
- Mix the egg yolks with mayo, dijon mustard, celery salt, sugar, and sweet relish until smooth.
- Transfer the egg mixture into a piping bag or zip-top bag. Pipe or spoon the mixture back into the egg whites. Sprinkle with paprika and Cajun seasoning, and garnish with Jalape?o Bacon Jam.
- For the Jalape?o Bacon Jam: Cook bacon in a cold nonstick skillet over medium heat for 7-10 minutes until foamy. Remove bacon and drain on paper towels, leaving 1 tablespoon of grease in the pan.
- In the same skillet, saut? onions and jalape?os for 2-3 minutes. Add garlic and cook for another 60 seconds.
- Add the cooked bacon, maple syrup, brown sugar, apple cider vinegar, and Cajun seasoning to the skillet. Mix well and simmer over medium-low heat for 12-15 minutes, stirring occasionally. Adjust thickness with water or more maple syrup/brown sugar if needed. Allow to cool before serving.
