  • 1 cup almond milk or any plant-based milk
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or sweetener of choice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt optional
Toppings
  • 1/2 cup fresh berries such as strawberries or blueberries
  • 2 tablespoons sliced almonds or any nuts

Method
 

Prepare the Pudding
  1. In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, vanilla extract, and salt until well combined.
  2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight until it thickens.
Serve
  1. Once thickened, stir the pudding and divide it into serving bowls.
  2. Top with fresh berries and sliced almonds before serving.
