Ingredients
  

Crust
  • 1 cup almond flour
  • 1/4 cup coconut oil melted
  • 2 tablespoons maple syrup
  • 1/4 teaspoon salt
Filling
  • 1 cup raw cashews soaked for 4 hours
  • 1/2 cup coconut cream
  • 1/4 cup maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries pureed
Topping
  • 1/2 cup fresh strawberries sliced
  • 2 tablespoons coconut flakes toasted

Method
 

Prepare the crust
  1. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until well combined.
  2. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
Make the filling
  1. In a blender, combine soaked cashews, coconut cream, maple syrup, lemon juice, vanilla extract, and pureed strawberries. Blend until smooth and creamy.
  2. Pour the filling over the crust in the springform pan and spread evenly.
Chill and serve
  1. Refrigerate the cheesecake for at least 4 hours or until set.
  2. Once set, top with sliced strawberries and toasted coconut flakes before serving.

Notes

For best results, soak the cashews overnight. You can also use other berries for the filling.
