Method
Prepare the crust
- In a mixing bowl, combine almond flour, maple syrup, melted coconut oil, and salt. Mix until well combined.
- Press the mixture into the bottom of a springform pan to form the crust.
Make the filling
- In a blender, combine soaked cashews, coconut cream, maple syrup, lemon juice, and vanilla extract. Blend until smooth and creamy.
- Fold in the sliced strawberries gently into the filling mixture.
Assemble the cheesecake
- Pour the filling over the crust in the springform pan and smooth the top with a spatula.
- Refrigerate for at least 4 hours or until set.
Serve
- Top with additional sliced strawberries and coconut flakes if desired. Slice and serve chilled.
