Ingredients
  

Lentils
  • 1 cup dry green or brown lentils rinsed and drained
Vegetables
  • 1 tablespoon olive oil for saut?ing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 1 medium zucchini diced
  • 1 cup corn fresh or frozen
  • 1 can diced tomatoes 14.5 oz
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 4 cups vegetable broth
Garnish
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced

Method
 

Cooking Lentils
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and saut? until translucent, about 5 minutes.
  2. Add the minced garlic, bell pepper, and zucchini. Cook for another 5 minutes until the vegetables are tender.
  3. Stir in the cumin, chili powder, smoked paprika, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Add the lentils, corn, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
  5. Once cooked, stir in the lime juice and garnish with fresh cilantro before serving.
