Ingredients
  

Burger Patties
  • 1 can black beans drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup bread crumbs preferably whole wheat
  • 1 medium carrot grated
  • 1 medium bell pepper diced
  • 1 clove garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil for cooking
Toppings
  • 4 slices cheese optional
  • 4 buns burger buns whole grain recommended
  • 1 cup lettuce shredded
  • 1 tomato sliced
  • 1/2 cup pickles sliced
  • 1/4 cup ketchup optional
  • 1/4 cup mustard optional

Method
 

Prepare the Mixture
  1. In a mixing bowl, mash the black beans with a fork or potato masher until mostly smooth.
  2. Add cooked quinoa, bread crumbs, grated carrot, diced bell pepper, minced garlic, cumin, paprika, salt, and pepper. Mix until well combined.
Form Patties
  1. Shape the mixture into 4 equal patties.
Cook the Patties
  1. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown.
Assemble the Burgers
  1. Place each patty on a bun and top with lettuce, tomato, pickles, and any additional toppings you prefer.
