Ingredients
  

Vegetables
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
Dressing
  • 1/2 cup apple cider vinegar
  • 1/4 cup granulated sugar adjust to taste
  • 1 teaspoon Dijon mustard
  • 1 teaspoon celery seeds
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 cup olive oil

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, shredded carrots, and shredded red cabbage.
Make the Dressing
  1. In a separate bowl, whisk together the apple cider vinegar, granulated sugar, Dijon mustard, celery seeds, salt, and black pepper until the sugar is dissolved.
  2. Slowly drizzle in the olive oil while whisking to emulsify the dressing.
Combine and Serve
  1. Pour the dressing over the cabbage mixture and toss until well combined.
  2. Let the coleslaw sit for at least 10 minutes before serving to allow the flavors to meld.

Notes

This coleslaw can be made a few hours in advance and stored in the refrigerator. It tastes even better after the flavors have had time to develop.
