Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and diced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground
Add-ins
  • 1 cup green beans trimmed and cut into 1-inch pieces
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 4 strips bacon cooked and crumbled

Method
 

Prepare the Potatoes
  1. Place the diced potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. Drain the potatoes in a colander and let them cool slightly.
Make the Dressing
  1. In a mixing bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
Combine Ingredients
  1. In a large bowl, combine the warm potatoes, green beans, red onion, and bacon. Drizzle with the dressing and toss gently to coat.
  2. Sprinkle with fresh parsley before serving.
