Ingredients
  

Cake Base
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 cup unsalted butter softened
  • 2 eggs
  • 1 tsp vanilla extract
Watermelon Layer
  • 4 cups watermelon diced and seeded
  • 1 cup whipped cream for topping

Method
 

Prepare the Cake Base
  1. In a mixing bowl, combine flour, sugar, and baking powder.
  2. Add softened butter, eggs, and vanilla extract. Mix until well combined.
  3. Pour the batter into a greased cake pan and smooth the top.
  4. Bake in a preheated oven at 350?F (175?C) for 25 minutes or until a toothpick comes out clean.
Assemble the Watermelon Fruitcake
  1. Once the cake has cooled, slice it into layers.
  2. Layer the diced watermelon between the cake layers.
  3. Top the final layer with whipped cream and additional watermelon pieces.
  4. Chill in the refrigerator for at least 1 hour before serving.
