Ingredients
  

Cake Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 tsp vanilla extract
Watermelon Layer
  • 4 cups seedless watermelon cubed
  • 1 cup whipped cream for topping

Method
 

Prepare the Cake Base
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, melted butter, eggs, and vanilla extract. Mix well.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  4. Pour the batter into a greased cake mold and smooth the top.
  5. Refrigerate for 15 minutes to firm up.
Assemble the Fruitcake
  1. Once the cake base is firm, layer the cubed watermelon evenly on top.
  2. Spread whipped cream over the watermelon layer to create a topping.
  3. Chill in the refrigerator for at least 30 minutes before serving.
