Method
Prepare the Watermelon Juice
- Cut the watermelon into chunks and blend until smooth. Strain through a fine mesh strainer to obtain 4 cups of watermelon juice.
Cook the Jelly
- In a saucepan, combine the watermelon juice, lemon juice, and sugar. Stir over medium heat until the sugar dissolves.
- Add the pectin and bring the mixture to a rolling boil. Boil for 1-2 minutes, stirring constantly.
Jar the Jelly
- Remove from heat and ladle the hot jelly into sterilized jars, leaving a 1/4 inch headspace. Seal with lids.
- Allow the jars to cool at room temperature before refrigerating.

Store in the refrigerator for up to 3 weeks. This jelly can also be canned for longer storage.
