Watermelon Jelly

Ingredients
  

Main Ingredients
  • 4 cups watermelon juice freshly juiced
  • 1 cup granulated sugar
  • 1 packet pectin powdered
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare the Watermelon Juice
  1. Cut the watermelon into chunks and blend until smooth. Strain through a fine mesh strainer to obtain 4 cups of watermelon juice.
Cook the Jelly
  1. In a saucepan, combine the watermelon juice, lemon juice, and sugar. Stir over medium heat until the sugar dissolves.
  2. Add the pectin and bring the mixture to a rolling boil. Boil for 1-2 minutes, stirring constantly.
Jar the Jelly
  1. Remove from heat and ladle the hot jelly into sterilized jars, leaving a 1/4 inch headspace. Seal with lids.
  2. Allow the jars to cool at room temperature before refrigerating.

Notes

Store in the refrigerator for up to 3 weeks. This jelly can also be canned for longer storage.
