  • 4 cups watermelon, cubed Seedless for best results
  • 1/4 cup fresh mint leaves Packed
  • 2 tablespoons lime juice Freshly squeezed
  • 2 cups sparkling water Chilled
  • 1 tablespoon honey Optional, adjust to taste

Method
 

Preparation
  1. In a blender, combine the cubed watermelon, fresh mint leaves, lime juice, and honey (if using). Blend until smooth.
  2. Strain the mixture through a fine mesh strainer into a pitcher to remove pulp.
  3. Add the chilled sparkling water to the pitcher and stir gently to combine.
  4. Serve immediately over ice in glasses, garnished with additional mint leaves if desired.
