Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 4 pieces chicken drumsticks bone-in, skin-on
Wet Batter
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 large egg beaten
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper optional for heat
Oil
  • 4 cups vegetable oil for frying

Method
 

Prepare the Chicken
  1. Rinse the chicken pieces under cold water and pat dry with paper towels.
  2. Season the chicken with salt, pepper, and paprika. Let it marinate for at least 15 minutes.
Make the Batter
  1. In a mixing bowl, whisk together the flour, buttermilk, egg, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper until smooth.
Heat the Oil
  1. In a deep fryer or large pot, heat the vegetable oil to 350?F (175?C).
Fry the Chicken
  1. Dip each piece of chicken into the wet batter, allowing excess to drip off.
  2. Carefully place the battered chicken into the hot oil, frying in batches to avoid overcrowding.
  3. Fry for about 12-15 minutes, or until the chicken is golden brown and reaches an internal temperature of 165?F (75?C).
  4. Remove the chicken from the oil and place on paper towels to drain excess oil.
Serve
