Ingredients
  

Beef
  • 2 pounds beef chuck, cut into 1-inch pieces
Vegetables
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups carrots, sliced into rounds
  • 3 cups potatoes, diced
  • 2 cups mushrooms, sliced
  • 1 cup frozen peas
Spices and Seasonings
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste
  • 2 leaves bay leaves
  • Fresh parsley, chopped (for garnish)

Method
 

Cooking Process
  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  2. Add the beef pieces in batches, browning on all sides. Remove and set aside.
  3. In the same pot, add the chopped onion and minced garlic. Saut? until translucent.
  4. Return the browned beef to the pot. Stir in the tomato paste, dried thyme, and dried rosemary.
  5. Pour in the beef broth and bring to a boil. Scrape the bottom of the pot to deglaze.
  6. Incorporate the carrots, potatoes, and bay leaves. Reduce heat to low and cover.
  7. Let it simmer for about 1.5 hours, or until the beef is fork-tender.
  8. Stir in frozen peas and adjust the seasoning with salt and pepper as needed.
  9. Before serving, remove the bay leaves from the pot.
  10. Sprinkle chopped parsley on top for a fresh touch.
