A healthy and delicious alternative to traditional lasagna, using zucchini slices instead of pasta sheets, layered with rich marinara sauce and creamy cheese.

Ingredients
  

Vegetables
  • 3 medium zucchini sliced thinly
  • 1 medium onion chopped
  • 2 cloves garlic minced
Sauce
  • 2 cups marinara sauce store-bought or homemade
Cheese
  • 15 ounces ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare Zucchini
  1. Preheat the oven to 375?F (190?C). Slice the zucchini thinly using a knife or mandoline.
  2. Sprinkle salt on the zucchini slices and let them sit for 10 minutes to draw out moisture. Pat dry with paper towels.
Cook Filling
  1. In a skillet, saut? the chopped onion and minced garlic over medium heat until translucent.
  2. Add the marinara sauce, oregano, basil, salt, and pepper. Simmer for 5 minutes.
Assemble Lasagna
  1. In a baking dish, spread a layer of the sauce mixture on the bottom.
  2. Layer half of the zucchini slices over the sauce, followed by half of the ricotta cheese, half of the mozzarella, and a sprinkle of Parmesan.
  3. Repeat the layers with the remaining ingredients, finishing with a layer of sauce and mozzarella on top.
Bake
  1. Cover the baking dish with foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  3. Let it cool for 10 minutes before slicing and serving.

Notes

For a spicier version, add red pepper flakes to the sauce. You can also substitute the ricotta with cottage cheese for a lighter option.
