  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs
  • 1/4 cup balsamic vinegar
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup ketchup (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a loaf pan with nonstick cooking spray.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, chopped onion, minced garlic, and half of the balsamic vinegar until just mixed.
  3. Shape the mixture into a loaf and place it in the prepared baking dish.
  4. In another bowl, whisk together ketchup, brown sugar, remaining balsamic vinegar, salt, and pepper for the glaze; pour half over the meatloaf.
  5. Bake for about 60 minutes or until the internal temperature reaches 160°F (70°C), brushing with remaining glaze during the last few minutes.
