  • 3 cups boneless, skinless chicken breasts (about 34 breasts)
  • 3 cloves fresh garlic, minced
  • 2 medium carrots, thinly sliced
  • 2 stalks celery, finely chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 16 oz gnocchi (store-bought or homemade)
  • 2 cups fresh spinach

Instructions

  1. Prepare your ingredients: Dice carrots and celery, mince garlic, and cube chicken into bite-sized pieces.
  2. Layer the chopped chicken in the bottom of your crockpot. Add garlic, carrots, celery, and thyme. Pour in chicken broth until all ingredients are covered.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Stir in heavy cream once cooking time is up to create a rich sauce.
  5. Add gnocchi to the soup and cook on high for an additional 30 minutes until tender.
  6. Before serving, stir in fresh spinach until wilted.
