This comforting treat is incredibly easy to prepare and pairs perfectly with chili, soups, or can be enjoyed on its own as a delightful snack. With just a handful of basic ingredients, you can create this crowd-pleaser in no time!

Ingredients

Scale
  • 1 cup medium-ground cornmeal
  • 1/2 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1 cup buttermilk
  • 2 large eggs
  • 4 tbsp melted butter (plus more for frying)

Instructions

  1. Preheat your cast-iron skillet over medium heat and melt 2 tablespoons of butter.
  2. In a bowl, whisk together cornmeal, flour, baking powder, salt, and sugar until combined.
  3. In another bowl, mix buttermilk and eggs until smooth; then gradually add melted butter while whisking.
  4. Combine wet and dry ingredients gently until just mixed—avoid overmixing.
  5. Pour batter into the hot skillet and cook for about 5 minutes until golden brown at the edges. Flip carefully and cook for another 5 minutes on the other side.
