- 3/4 cup granulated sugar (150g)
- 1 tsp baking powder
- 4 large eggs
- 1/2 cup mango puree (120ml)
- 1 cup heavy cream (240ml)
- Fresh mango slices for decoration
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk eggs and sugar until fluffy. Gradually add sifted flour, baking powder, and ube powder until well combined. Adjust consistency with warm water if needed.
- Spread the batter evenly on the baking sheet and bake for 12-15 minutes until golden brown.
- Cool slightly, then roll the cake with parchment paper still attached. Let cool completely while rolled.
- Whip heavy cream until soft peaks form, then fold in mango puree.
- Unroll the cooled cake, spread whipped cream mixture evenly, then roll it back up tightly.
