  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp peppermint extract
  • 3 crushed candy canes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper.
  2. Melt the butter in a saucepan over low heat. Once melted, remove from heat and mix in granulated and brown sugars until combined.
  3. Allow to cool slightly before adding eggs one at a time, mixing in vanilla extract.
  4. In another bowl, whisk together cocoa powder, flour, baking powder, salt, and peppermint extract. Gradually combine with wet ingredients without overmixing.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs.
  6. Let cool completely before frosting with a mixture of powdered sugar and softened butter combined with peppermint extract. Top with crushed candy canes.
