  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz fire-roasted diced tomatoes (canned)
  • 15 oz tomato sauce (canned)
  • 4 cups low-sodium beef broth
  • 2 tsp dried Italian seasoning
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. In a skillet over medium heat, brown the ground beef. Drain excess fat and add onions and garlic; sauté until fragrant.
  2. Transfer the meat mixture to a slow cooker. Add diced tomatoes, tomato sauce, beef broth, and Italian seasoning; stir to combine.
  3. Break lasagna noodles into small pieces and add them to the slow cooker; mix well.
  4. Cover and cook on low for 4 hours or high for 2 hours.
  5. Stir in ricotta cheese about 15 minutes before serving. Top with mozzarella cheese before serving.
