Description

  • 1 cup granulated sugar

  • 2 large fresh lemons (juiced and zested)
  • 2 tbsp dried culinary lavender
  • 3 large eggs
  • 1 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a mixing bowl, cream together unsalted butter and granulated sugar until fluffy. Gradually mix in all-purpose flour until combined.
  3. Press the mixture into the prepared pan and bake for about 15 minutes until lightly golden.
  4. In another bowl, whisk the eggs, then add lemon juice, zest, lavender, and sugar; mix well.
  5. Pour the filling over the baked crust and return it to the oven for an additional 20-25 minutes until set.
  6. Let cool completely in the pan before dusting with powdered sugar and slicing into squares.
