- 1 cup all-purpose flour

- 1/4 tsp salt
- 3–4 tbsp ice water
- 1 egg yolk (for brushing)
Instructions
- In a bowl, mix almond flour, all-purpose flour, and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms.
- Wrap dough in plastic wrap and refrigerate for at least one hour.
- Preheat oven to 375°F (190°C).
- Combine chopped rhubarb and sugar; let sit for juices to release.
- Roll out chilled dough into a 12-inch circle on floured surface; transfer to parchment-lined baking sheet.
- Spoon rhubarb filling onto the dough center, leaving a 2-inch border. Fold edges over the filling and brush with egg yolk.
- Bake for 35-40 minutes until golden brown.
