  • 3/4 cup granulated sugar
  • 1/2 cup almond flour
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 34 tbsp ice water
  • 1 egg yolk (for brushing)

Instructions

  1. In a bowl, mix almond flour, all-purpose flour, and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms.
  2. Wrap dough in plastic wrap and refrigerate for at least one hour.
  3. Preheat oven to 375°F (190°C).
  4. Combine chopped rhubarb and sugar; let sit for juices to release.
  5. Roll out chilled dough into a 12-inch circle on floured surface; transfer to parchment-lined baking sheet.
  6. Spoon rhubarb filling onto the dough center, leaving a 2-inch border. Fold edges over the filling and brush with egg yolk.
  7. Bake for 35-40 minutes until golden brown.
