Ingredients
  

Potatoes
  • 24 oz bite size potatoes, sliced in half
Chicken
  • 3 large chicken breasts (2 ? 3 lbs)
Marinade
  • ? cup chicken stock
  • ? cup olive oil
  • 1 tbsp minced garlic and red chili pepper
  • 2 small lemons zest and juice
  • 2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tbsp oregano
  • 1.5 tbsp tomato paste
  • 1.5 tsp salt, divided
  • 1.5 tsp black pepper, divided

Preparation
  1. Add the sliced potatoes into the crockpot. Pour the chicken stock over them and toss together. Set it aside.
  2. In a measuring cup or bowl, add olive oil, minced garlic and red chili pepper, the zest of 1 lemon, the juice of both lemons, garlic powder, Italian seasoning, paprika, oregano, tomato paste, 1 tsp salt, and 1 tsp black pepper. Whisk until combined. Pour half of the marinade over the potatoes and toss until incorporated.
  3. Place the chicken breasts over the potatoes and sprinkle ? tsp of salt and ? tsp of pepper over the chicken. Pour the remaining marinade evenly over the chicken and smooth it out.
  4. Cover the crockpot and cook on high for 4 ? 5 hours or low for 6 ? 8 hours.
