Method
- Preheat a large shallow pot full of about 2 inches of oil over medium heat to about 375?F.
- In a medium sized bowl, mix together the flour, baking powder, salt, cinnamon, and 2 tablespoons of sugar.
- In a small bowl, stir together the buttermilk and egg.
- Dump the buttermilk and egg mixture into the flour mixture and stir together until just mixed.
- In a small bowl, combine the cinnamon and remaining sugar for the topping and set it aside on a plate.
- Slice the apples into thin round slices, about 1/4 inch thick, and cut out and discard the core.
- Cut each apple slice into 2 rings.
- Dip the apple slices into the batter and allow excess batter to drip off.
- Put a few slices at a time into the preheated oil.
- Allow to cook for about 2 minutes total, flipping over halfway through when the bottom is golden brown until both sides are nicely golden brown.
- Remove from oil and place on paper towels to drip excess oil off.
- Dip apple slices into the cinnamon sugar mixture and coat on both sides.
- Serve hot.
