Ingredients
  

  • 3-4 large apples any firm variety
  • for frying oil for frying
  • 1 cup flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon for batter
  • 2 TBS white sugar for batter
  • 1 cup buttermilk or 1 cup milk mixed with 1 tsp white vinegar
  • 1 large egg
  • 1/2 cup white sugar for topping
  • 1/2 tsp cinnamon for topping

Method
 

  1. Preheat a large shallow pot full of about 2 inches of oil over medium heat to about 375?F.
  2. In a medium sized bowl, mix together the flour, baking powder, salt, cinnamon, and 2 tablespoons of sugar.
  3. In a small bowl, stir together the buttermilk and egg.
  4. Dump the buttermilk and egg mixture into the flour mixture and stir together until just mixed.
  5. In a small bowl, combine the cinnamon and remaining sugar for the topping and set it aside on a plate.
  6. Slice the apples into thin round slices, about 1/4 inch thick, and cut out and discard the core.
  7. Cut each apple slice into 2 rings.
  8. Dip the apple slices into the batter and allow excess batter to drip off.
  9. Put a few slices at a time into the preheated oil.
  10. Allow to cook for about 2 minutes total, flipping over halfway through when the bottom is golden brown until both sides are nicely golden brown.
  11. Remove from oil and place on paper towels to drip excess oil off.
  12. Dip apple slices into the cinnamon sugar mixture and coat on both sides.
  13. Serve hot.
