Cooking the Chutney
- In a saucepan over medium heat, combine the diced pineapple, jalape?o, red onion, and garlic. Cook for about 5 minutes until the onion is translucent.
- Add the apple cider vinegar, brown sugar, salt, ground ginger, and cinnamon to the saucepan. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, stirring occasionally until it thickens.
- Remove from heat and let it cool slightly. For a smoother texture, blend the chutney in a blender until desired consistency is reached.
- Transfer the chutney to a clean jar and let it cool completely before storing in the refrigerator.
