Ingredients
  

Rice Mixture
  • 4 cups cooked short grain rice
  • 2 tablespoons rice vinegar
  • 2 teaspoons white granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons furikake for topping
Crab Mixture
  • 14 oz imitation crab meat shredded
  • ? cup Japanese mayo
  • ? cup cream cheese softened
Finishing Touches
  • 1 green onion sliced for garnish
  • 4 tablespoons sriracha
  • 4 tablespoons Japanese mayo for spicy mayo
  • 4 sheets nori for serving

Method
 

Preparation
  1. Preheat the oven to 450?F.
  2. In a small bowl, combine rice vinegar, salt, and sugar and mix until dissolved.
  3. Transfer hot cooked rice into a medium bowl and mix in the rice seasoning liquid with a rice paddle.
  4. Transfer seasoned rice to a lightly greased baking dish and pack it down with a wet rice paddle. Sprinkle furikake on top.
Crab Mixture
  1. In a large bowl, combine shredded imitation crab meat with Japanese mayo and cream cheese.
  2. Spread crab mixture evenly on top of the rice and pack it in. Sprinkle remaining furikake on top.
Baking
  1. In a small bowl, mix Japanese mayo and sriracha to create a spicy mayo. Drizzle it over the crab layer.
  2. Bake uncovered for 15 minutes, then broil for 1 minute. Cover with aluminum foil if needed.
Serving
  1. Garnish with green onions and slice into pieces. Serve warm with nori and cucumber.
